Food Microbiology: Interview with an Industry Expert
MicroBioLogics® recently visited Dr. Purnendu C. Vasavada at the University of Wisconsin – River Falls. Dr. Vasavada is a professor of food science at the College of Agriculture Food and Environmental Sciences. He is also an Extension Food Safety and Microbiology Specialist with expertise in rapid microbiology, food-borne pathogens, and microbiological quality of milk and dairy products. Each fall for the past 30 years, Dr. Vasavada has organized a Food Microbiology Symposium at UWRF. The 30th Food Microbiology Symposium and Rapid Methods Workshop will be October 17-20, 2010 in River Falls, Wisconsin.
In this interview, we asked Dr. Vasavada to share his opinions on current food testing practices. We also asked how food laboratories perform quality control on new batches of media.

Q. Why do the names of microorganisms keep changing?
A. In the past, microorganism names were often based on phenotypic tests. Today, names are often based on molecular and genotypic testing in addition to phenotypic testing.
Improved genotypic testing has resulted in culture collections changing a number of microorganism names. In some cases a subspecies has been added to a microorganism name. For example,
Bacillus subtilis, MicroBioLogics 0486, is now called
Bacillus subtilis subsp. spizizenii. In other cases, the microorganism has changed species. MicroBioLogics 0392, which was called
Aspergillus niger, has been reclassified as Aspergillus brasiliensis.
MicroBioLogics provides a number of letters explaining why names are changed. Click on the links below to find out more about specific name changes.

Are you wondering which microorganisms to use for quality control of your
Campylobacter blood agar?
The Clinical and Laboratory Standards Institute® (CLSI) lists which reference cultures to use for quality control of certain selective types of media in Document M22-A3, "Quality Control for Commercially Prepared Microbiological Culture Media: Approved Standard – Third Edition". CLSI strongly encourages laboratories to confirm the ability of new lots of media to support growth of fastidious organisms such as
Campylobacter.
The microorganisms needed for quality control of Campylobacter blood agar are
Campylobacter jejuni subsp. jejuni, MicroBioLogics® #0481, and
Escherichia coli, MicroBioLogics® #0335. Both microorganisms are available in MicroBioLogics® Set #5026, CLSI (NCCLS) M22; Campylobacter Agar QC Set. Sets are also available for quality control of chocolate agar (MicroBioLogics® Set #5027) and selective media for pathogenic
Neisseria (MicroBioLogics® Set #5028).
